Lobster Macaroni And Cheese

Talk about decadence! Make your macaroni and cheese extra rich by adding lobster!

 

Lobster Macaroni And Cheese

Serves 8

2 x 1.5lb lobsters (steamed or boiled for 8 min)
300 gr elbow macaroni
450mL 35% cream
4oz white wine
2 cloves garlic chopped 
2 shallots chopped
1 oz butter
4 oz parmesan grated
4oz cheddar grated
Seasoned bread crumbs
1  lemon
Basil
Salt and pepper

1. Clean lobster (watch the tips!!! easy peasy!!) chop into bite size pieces. Save claws for garnish.

2. Boil pasta to the bite (eldenta) in a sauce pot.

3. Sweat shallots in butter, add garlic, deglaise with white wine.

4. Add heavy cream and reduce by 1/3rd, then add pasta, and fold in 2/3rds of both cheeses.

5. Add lobster, season mac with salt, pepper and the other squeeze of lemon, adjust consistency and plate.

6. Garnish with remaining cheese, lobster claws, basil and bread crumbs .

***For the Kids*** pull some of the mac before the lobster and garnish.
