Juniper Berry Salmon

Spare the foil, and plank your salmon for a change. 

Juniper Berry Salmon

Ingredients:

1 cedar plank
8 salmon filets 8 oz
½ tsp kosher salt
½ tsp black pepper (freshly cracked)

Marinade:
2 tbsp juniper berries
4 tbsp gin
½ cup olive oil
1 lemon (zest only)
1 jalapeno pepper

Method:

Soak cedar plank overnight or for a minimum of two hours.

Fire up the charcoal grill to medium temperature.

Once the grill is at the right temperature place cedar plank on the grill to dry out and start to crackle.

Meanwhile, create the marinade by mixing the juniper berries, Gin, oil, lemon zest and jalapeno pepper.

Place salmon in the marinade and marinate for less than 30 minutes; keep refrigerated.

Open grill and place seasoned salmon on the plank directly over the heat. Close the lid and let the grill do the work. A total of 15 to 20 minutes will do the trick.

Remove from grill and let rest for 3 to 5 minutes and enjoy.

Serves 8.
