Add a little frisée to your diet this season.

Grilled Calamari with Tomato Frisée Salad

Ingredients:

24 oz calamari, fresh small cleaned
2 cups Italian bread, finely diced
2 cloves garlic, chopped
2 tbsp parsley
4 salted Anchovies fillets, chopped
4 tbsp white onions, chopped
1 cup cherry tomato, cut in half
2 cups Frisée
4 green onions, chopped
4 tbsp olive oil
2 lemons
salt & pepper


Method:

Cut the calamari into strips and set aside wrapped in a towel.

Preheat a skillet and add some olive oil.

Then add the anchovies and the garlic, cook until the anchovies are dissolved.

Add the onions and a grating of lemon rind, then immediately add into it the bread and toast until dry and slightly golden. Season with parsley, salt and pepper and remove from the fire.

Prepare the calamari: season with salt and pepper, add just a few drops of olive oil and preheat a stove top grill.

Cook the calamari for about three minutes.

Then place into a bowl, immediately sprinkle with the bread and place atop of the Frisée mixed with green onions and cherry tomatoes. Season with a squeeze of lemon juice and serve.

Serves 4.
