Chicken, Lime and Bean Tacos With Chocolate Mole

Fresh Tacos

1 cups golden flaxseed
1/3 cup toasted sunflower seeds
1 cup water
3 tsp finely chopped onion
1 tsp finely chopped garlic
1/2 tsp finely chopped red chillies
1/2 tsp ground cumin
1 tbsp poppy seeds
Salt and pepper

1. Mix flaxseed with sunflower seeds and water overnight.
2. Drain and puree with the onion, garlic, chilly and cumin until smooth.
3. Once smooth fold in the poppy seeds. Season with salt and pepper and chill.
4. Once the mix is cold spread it thinly on parchment paper in desired shape and place in a 200 degree Fahrenheit oven for approximately one hour.
5. Fold them over and continue to dry until crisp.

Chocolate Mole

2 cups sweet red bell peppers
2 whole red chillies, seeded
1/4 cup sesame seeds
1/2 tsp coriander seeds
1/3 cup blanched almonds
1/3 cup raisins
1/2 sliced onion
2 cloves garlic
10 black peppercorns
4 cloves
1 star anise
1/2 cinnamon stick
1/4 cup butter
2 cups white bread
1 large tomato, seeded and skinned
2 oz chocolate
3 cups chicken stock

1. Grind the coriander seeds, black peppercorns, cloves, star anise and cinnamon stick in a spice grinder.
2. In a large frying pan melt the butter over medium heat.
3. Add the red peppers, tomatoes, chillies, sesame seeds, onions, garlic and ground spices.  Warm through for 2 minutes then add 2 cups chicken stock and simmer for 5 minutes.
4. Pour in a blender. Add the raisins and blanched almonds.
5. Puree then add the chocolate, bread and the rest of the chicken stock.
6. Chill before serving.

Chicken

8 whole hard tacos
4 whole chicken breasts, cooked
1/2 cup lime segments
1/4 cup lime juice
1/4 cup soya bean oil
1 cup sliced jicama
1 cup chopped tomato
1/4 cup cilantro leaves
1/2 cup sliced green onion
1 cup black beans, cooked
1 cup baby arugula leaves
2 cup chocolate mole

1. Slice the cooked chicken breasts and place in a large bowl.
2. Add the lime segments, jicama, tomatoes, cilantro leaves, sliced green onion, black beans and baby arugula.
3. Toss in the lime juice and soya bean oil and season with salt and pepper.
4. Stuff in the hard tacos and serve with the chocolate mole on the side.

Makes 4 portions.
