Cheryk Kaye Tardif's Strawberry Dumplings
Sauce Ingredients:
1 bag frozen strawberries
1 1/2 c orange juice
1 cup water
1/4 cup sugar
1 Tbsp butter
Dumpling Ingredients:
1 1/2 cups flour
1/3 cup sugar
1 Tbsp baking powder
2/3 cup milk
2 Tbsp oil
1/2 tsp salt
ground cinnamon
mint leaves
Preparation:
In a large wok or frying pan (with lid), combine the sauce ingredients and bring to a boil. Remove from heat. In a mixing bowl, combine thet remaining ingredients, except the mint and cinnamon. Stir with a fork until mixed well, but don't over mix.
Divide the dough into eight spoonfuls and drop carefully into sauce, allowing the dumplings to sit on top of the sauce. Sprinkle with cinnamon. Cover and simmer on medium heat for about 12 minutes.
Variations: add a splash of rum or brandy to the sauce; use raspberries or wildberry mix.
