Sherry and Lori's Cheesy Fish Chowder

1 lb fish fillets - any combination of haddock, halibut, ocean perch, cod, Boston blue fish or turbot
1 can chicken haddie (optional)
2 tbsp butter or margarine
1/4 cup finely chopped onion
1 cup finely chopped carrot
1/3 cup finely chopped celery
1/4 cup flour
1/2 tsp salt
dash of paprika
2 cup chicken broth
3 cups milk
1 cup grated cheddar cheese

De-bone fillets and cut into ... inch cubes. In a Dutch oven, melt butter and sante onion, carrot, and celery until onion is transparent. Blend in flour, salt, and paprika. Gradually add broth and m.... Cook stirring constantly until thickened. Add fish and simmer until fish flakes easily with a fork. Add cheese and stir until melted.
