Local jazz musician, Brett Miles, has played with great artists like James Brown and Mick Jagger. In this edition if Celebrity Chefs, he's getting funky in the kitchen with his wife, Dani. Click on the "Watch Video" link to find out how he makes his signature Funky Fried Chicken.

Brett and Dani will be instructing a week long musical theatre camp this summer called "The New York Experience. It's for kids aged 8-14. Brett will be composing, and Dani will be doing the directing and choreography. It's tentatively running at Festival Place in Sherwood Park from July 7 to 11. More details are expected to be announced next week.

Brett Miles' Funky Fried Chicken
chicken breast
canola oil
salt and pepper, to taste
hot sauce, to taste
flour

Heat canola oil in pan. Cut chicken breast into strips. Season with salt and pepper. Beat egg, add hot sauce, and mix well. Put chicken in egg solution and coat. Sprinkle flour on top and mix well. Place in pan and cook until outside is brown and crispy. Remove chicken from oil and pat with paper towel to get rid of excess oil. Drizzle with hot sauce dressing and serve.

Hot Sauce Dressing
1/8 c butter
hot sauce, to taste

Heat butter in sauce pan until melted. Add hot sauce and mix together until smooth. Drizzle on top of chicken.

Banana Rice
1 cup rice
1 cup milk
1 cup soy milk
1 banana, chopped
2 dollops butter
Cinnamon to taste.

Put all ingredients in a pot, mix well, and boil until liquid is absorbed.

Salad
1 head of lettuce, ripped
1 apple, chopped
diced cheese
handful of raisins
1 tomato, diced

Toss together and serve.
