How To Throw A Super Bowl Party To Remember

With Super Bowl Sunday around the corner, Videographer Audra Brown finds out what to buy and cook for the perfect get-together. Here are two mouth-watering recipes from Chef Rob Rainford:


Bacon Wrapped Chicken Chops

30 pc Chicken Wings

Stuffing for Chicken Wingette
½ Red Pepper (fine dice)
2 Shallots (minces)
3 Large Green Olives (chopped fine)

The Rainford Method:

The first job we have is to de-bone the wingette part of the chicken wing. As some of you know there are two parts to the wing. The one we all know and love is called the drumette and as you know no the other part is called the wingette. Least we forget the third part is called the wing tips and they are excellent for making a double chicken stock. Back to our methodology cut the chicken wings if attached in half save the drumettes for another wing night.

Now the fun part take your boning knife and make a cut between the two bones in the wing at one end only. Be consistent with which end you cut because it makes it easier to pull the chicken back for this wonderful looking chicken appetizer or in this case Super Bowl worthy snack.

Once the cut has been made remove the smaller bone in the wingette leaving behind the larger bone in tact with the chicken. The reason we’re taking our time with this part is to make it easier for the person eating the chicken chop. The beauty is that it can be eaten with one hand (wicked I know)

It not very complicated to pull the chicken meat back to one end leaving exposed bone on one side and an inverted umbrella shape on the other side. Once this task is done you’re on easy street. At the beginning it use to take me a long time to get my speed down on these but I didn’t let that discourage me from doing them even though I know they take so long to make and disappear even faster.

Now that the hard part is over cut all veg into the size recommended above and place into a bowl. Get your self a teaspoon and prepare to stuff the wings with the stuffing. Be careful not to stuff to much content in this is to be a one to two bite appetizer.

Once the stuffing is done lay out your bacon flat and cut in half. You want to go completely around the wing when wrapping it up and securing it with a tooth pick. Another little trick I use to help the wingette keep its shape is to wrap them in plastic wrap nice and tight and place them into the fridge to set up. The way something looks is just as important as how it taste.

While the chicken chops are chilling out in the fridge pre heat your oven or grill to 350 deg F or 177 deg C. For the grill sear the chicken chop on hi temp and move to an indirect cooking method to finish them off.

This process can take up to 30 to 45 minutes but a clear indicator as to when the chicken chops are done would be to look for clear running juices or and internal temperature of 165 deg F or 174 deg C.

You can easily crisp up the bacon on placing it back on the grill or place it back in the oven to achieve the color you’re looking for.

No matter what side wins you’re going to be the hit of the Super Bowl recipes.


Miami short Ribs (Super Bowl Style)

5 lbs or 2 ½ kg Miami Cut Shot Ribs

Marinate:
1/3 cup Soy (low sodium)
1/3 cup Mirin (sweet cooking rice wine)
1/3 cup Rice Wine (seasoned)
1 tsp Hot Sauce
1 tbsp Honey (liquid)
3 tbsp Olive Oil

Dry Rub:
1½ tsp Brown Sugar
1½ tsp Paprika
1½ tsp Black Pepper
1½ tsp Garlic Powder
1½ tsp Oregano
1½ tsp Ground Cumin
1½ tsp Dry Thyme
1½ tsp Cayenne Pepper
1½ tsp Dry Mustard
1/3 tsp Kosher Salt

The Rainford Method:

For the best results allow the ribs to sit in the marinate for 2 hours up to 8 hours if time permits. Don’t be afraid of a quick marinate because a little flavor is better than no flavor.

Once the marinate has done its work pre heat your Napoleon City Grill to Hi.

Dry off all of the marinate and moisten the meat with a touch of olive oil and place a generous amount of the dry rub mixture on both sides of the meat.

Now that your grill is nice and hot it’s time for you to place the ribs on the grill and cook them to medium rare or to the doneness you prefer. Two flips is more than enough to cook both sides to you likeness.

This is a quick and easy recipe that will be ready in no time so you can enjoy your snacks with your friends while the Super Bowl is on.
