Laab (Risara Piyo)
Ingredients:
1/2 kg lean ground pork
4 tbsp raw sticky rice
2 tbsp fish sauce
1/2 tsp white sugar
1 large lime
2 shallots
1 tbsp dried chili
15 - 20 leaves of mint
1 barrel head lettuce
Directions:
1. Cut shallots into fine pieces.
2. Slice lime into four parts.
3. Place lean ground pork into a pot and cook well on high heat.
4. In a separate pan, with no oil, pour raw sticky rice into pan and cook until golden brown.
5. When sticky rice is golden brown, grind to smaller pieces, either using a grinder or a crowk. Grind until medium in size but not to small.
6. In a larger pot, squeeze lime into pot.
7. Add finely cut shallots with lime juice.
8. Add 2 tablespoons of fish sauce into lime juice and shallots.
9. Add 1/2 teaspoon of white sugar to lime juice and shallot mixture.
10. Add 1 tablespoon of dried chili to lime juice and shallot mixture and stir.
11. After pork has been cooked well, add the pork to the lime juice and shallot mixture. Stir everything together.
12. Pour on top, your grounded brown raw sticky rice (4 tablespoons) and stir together.
13. Now add your 15 - 20 mint leaves and stir together.
14. Cut the bottom of your barrel head lettuce away.
15. Separate the leaves of the barrel head lettuce, wash them and place in a bowl or on a plate.
16. With a tablespoon take the pork mixture and pour it into the leaf of the barrel head lettuce and eat like a taco.
