Algarve Prawns (Christina Erdman - Bardot Waterfront Bar & Grille)

Ingredients:
10 large prawns, shelled and de-veined
2 tsp olive oil
1/2 tsp finely chopped garlic
1/4 tsp chili flakes
1/2 jalapeno, finely chopped
1 tsp chopped Italian parsley
salt and pepper
1/4 cup dry white wine
1/2 tsp lemon juice
1 tbsp brandy
2 tbsp cold unsalted butter
Directions:
1. Heat oil in a fry pan. Add prawns.
2. Cook both sides until lightly browned and pink - about 1 minute each side.
3. Add garlic, chili flakes, jalapeno and parsley, tossing to coat prawns.
4. Add white wine and lemon juice.
5. Reduce liquid to about 2 tablespoons.
6. Remove from heat, add brandy and light with match.
7. Toss until flame goes out.
8. Add the butter and toss until butter has melted.
9. Season to taste.
Serves: 2
