Pork and Clams (Christina Erdman - Bardot Waterfront Bar & Grille)

Ingredients:
#1:
3 lbs pork loin, cut into 1 inch cubes
10 whole garlic, sliced thinly
2 tbsp paprika
2 tbsp calda paste (may substitute sambal or other chili paste)
1/2 cup dry white wine
2 tbsp coarse sea salt
3 bay leaves crumbled
#2
4 lbs hard shelled clams
1.5 tsp garlic finely chopped
1/2 tsp chili flakes
1/2 cup dry white wine
1 lemon, juiced
1/4 cup chopped Italian parsley
1/4 cup cold butter
salt & pepper
Directions:
1. Put ingredients from #1 in a bowl.
2. Marinate for 2 hours or overnight in refrigerator.
3. Heat frying pan with some vegetable oil.
4. Pan sear pork until golden brown.
5. Cook until tender, then add ingredients in #2.
6. Cover and cook for 5-7 minutes or until clams have opened.
