Lotus Root Soup (Dan Seto - Chinese Canadian Historical Society of BC)

Ingredients:
1 lb fresh lotus root
1 lb spare ribs
6 Chinese red dates
12 cups water
2 tbsp sliced ginger
1 tbsp soy sauce
1 tsp salt
3 to 6 dried scallops (optional)
Directions:
1) Wash and clean lotus root. Cut into 1/4-inch slices crosswise so they look like wagon wheels.
2) Cut spareribs into small slabs.
3) Combine lotus root, spareribs, Chinese red dates, ginger root, soy sauce, salt and dried scallops into pot. Add water and bring to boil.
4) Skim surface with a spoon to clear the broth.
5) Lower heat, cover with lid, and cook for 1 hour.
Note: you can substitute pork spareribs with beef short ribs, oxtail or any other beef or pork bones.
