Fresh Chanterelle Salad with Baby Frisee Salad

Ingredients:

1 lb fresh chanterelle mushrooms
1 head baby frisee salad
2 quail eggs, soft-boiled
4 oz olive oil
1 oz balsamic vinegar
salt & pepper to taste

Directions:

Wash and remove all the little pieces of wood and dirt from the frisee by washing three times in fresh water.  Then let dry.

Wash the chanterelle just like the salad and set aside.

In a preheated pan, saute the mushrooms for 5 minutes until nice and soft.

Mix the olive oil, vinegar and salt and pepper together and toss half of the dressing into the salad.  Place salad in the centre of the plate.

Put the mushrooms around the salad and drizzle more dressing over the mushroom, topping with a quail egg.  Serve immediately.
