Ingredients:
Dressing:
2 tbsp vegetable oil
2 tbsp fresh lemon juice
2 tsp soy sauce
1.5 tsp sweet chili sauce
1 tsp turmeric powder
1 tsp grated ginger

Noodles:
8 oz dried soba noodles
2 cups sliced Napa cabbage
1/2 tsp sesame oil
1/4 cup sliced pickled ginger
2 tbsp chopped cilantro
2 green onions, julienned

 

Directions:
1. In a large pot of boiling water, cook noodles according to package directions.
2. Drain, rinse with cold water, and drain again. Place noodles in a large bowl.
3. Add Napa cabbage and sesame oil. Toss until evenly combined.
4. Combine dressing ingredients in a medium bowl; mix well.
5. Pour dressing over noodle mixture. Add pickled ginger, cilantro, and green onions. Toss to evenly coat.
6. Serve, or cover and refrigerate for up to 3 hours.
